- 2 lbs potatoes, peeled and cubed
- 1/2 cup heavy cream
- 4 tbsp butter
- Salt and black pepper, to taste
Instructions
- Prepare the Mashed Potatoes:
- Boil peeled and cubed potatoes in salted water for 15-20 minutes, or until fork-tender.
- Drain and mash with butter and heavy cream until smooth.
- Season with salt and black pepper to taste. Cover and set aside.
- Caramelize the Onions:
- Heat butter and olive oil in a skillet over medium heat.
- Add thinly sliced onions and cook, stirring occasionally, for 15-20 minutes, or until golden brown and caramelized.
- Stir in balsamic vinegar and sugar (if using) and cook for an additional 2-3 minutes. Set aside.
- Cook the Ribeye Steaks:
- Pat the ribeye steaks dry with a paper towel and season generously with salt and black pepper.
- Heat olive oil in a skillet over high heat until shimmering.
- Sear the steaks for 3-4 minutes per side for medium-rare doneness (adjust time for preferred doneness).
- During the last minute, add butter and thyme or rosemary to the skillet and baste the steaks by spooning melted butter over them.
- Remove the steaks from the skillet and let them rest for 5 minutes.
- Serve:
- Plate the steaks and top with caramelized onions.
- Serve alongside the mashed potatoes and enjoy.
