For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tbsp butter
  • Salt and black pepper, to taste

Instructions

  • Prepare the Mashed Potatoes:
    • Boil peeled and cubed potatoes in salted water for 15-20 minutes, or until fork-tender.
    • Drain and mash with butter and heavy cream until smooth.
    • Season with salt and black pepper to taste. Cover and set aside.
  • Caramelize the Onions:
    • Heat butter and olive oil in a skillet over medium heat.
    • Add thinly sliced onions and cook, stirring occasionally, for 15-20 minutes, or until golden brown and caramelized.
    • Stir in balsamic vinegar and sugar (if using) and cook for an additional 2-3 minutes. Set aside.
  • Cook the Ribeye Steaks:
    • Pat the ribeye steaks dry with a paper towel and season generously with salt and black pepper.
    • Heat olive oil in a skillet over high heat until shimmering.
    • Sear the steaks for 3-4 minutes per side for medium-rare doneness (adjust time for preferred doneness).
    • During the last minute, add butter and thyme or rosemary to the skillet and baste the steaks by spooning melted butter over them.
    • Remove the steaks from the skillet and let them rest for 5 minutes.
