Instructions

  • Prepare the Glaze:
    • In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, rosemary, salt, and black pepper.
  • Cook the Lamb Chops:
    • Heat a skillet over medium-high heat and add 1 tbsp olive oil.
    • Sear the lamb chops for 3-4 minutes per side until golden brown.
    • Pour the prepared glaze over the chops, reduce heat to medium, and simmer for 2-3 minutes while flipping occasionally.
    • Remove from heat and let the chops rest for a few minutes before serving.
  • Make the Mashed Potatoes:
    • Boil the cubed potatoes in salted water for 15-20 minutes, or until fork-tender.
    • Drain well and return to the pot.
    • Mash the potatoes with butter, milk, garlic powder, salt, and pepper until smooth and creamy.
  • Assemble and Serve:
    • Plate a generous serving of mashed potatoes on each plate.
    • Top with glazed lamb chops and drizzle any remaining glaze over the top.
    • Garnish with fresh rosemary if desired, and serve warm.
