- 1/2 cup milk or cream
- 1/2 tsp garlic powder
- Salt and pepper, to taste

- Prepare the Glaze:
- In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, rosemary, salt, and black pepper.
- Cook the Lamb Chops:
- Heat a skillet over medium-high heat and add 1 tbsp olive oil.
- Sear the lamb chops for 3-4 minutes per side until golden brown.
- Pour the prepared glaze over the chops, reduce heat to medium, and simmer for 2-3 minutes while flipping occasionally.
- Remove from heat and let the chops rest for a few minutes before serving.
- Make the Mashed Potatoes:
- Boil the cubed potatoes in salted water for 15-20 minutes, or until fork-tender.
- Drain well and return to the pot.
- Mash the potatoes with butter, milk, garlic powder, salt, and pepper until smooth and creamy.
- Assemble and Serve:
- Plate a generous serving of mashed potatoes on each plate.
- Top with glazed lamb chops and drizzle any remaining glaze over the top.
- Garnish with fresh rosemary if desired, and serve warm.
